THE RICE BEHIND THE SAKE

California is the second-largest rice-producing state in the country, and nearly all of it traces back to Japanese hybrids, a reflection of the state's deep historical ties to Japan. We source all of our sake rice from the Sacramento Valley through Lopes Family Farm, a fourth-generation operation that practices Aigamo farming: a fully organic, regenerative method where flocks of ducks naturally fertilize and maintain flooded rice paddies, eliminating pesticides, herbicides, and synthetic fertilizers entirely. STEWARDS OF THE ENVIRONMENT

The California Ricelands Waterbird Foundation is dedicated to preserving and restoring the ecological balance of California’s rice-growing region. Historically, the state’s wetlands have provided essential habitat for migratory birds year-round. However, due to increasing water demands, more than 95% of these wetlands have been lost.

By partnering with local rice farmers and conservation groups, the foundation is working to recreate these vital flooded habitats—known as “surrogate wetlands”—to support migratory bird populations. This innovative collaboration between agriculture and conservation is strengthening the region’s ecosystem in a truly impactful way.
